Roasted Figs
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 4 servings
8 fresh figs (available at any large gourmet food store)
1tbsp castor sugar*
2tbsp balsamic vinegar
2tbsp olive oil
1tbsp black pepper
½ cup parmesan shavings
1. Bisect the figs laterally. Place on silver foil with the wider curled end facing down. Shake over with sugar. Place under the grill for 4 to 5 minutes until brown. Assemble on a dish.
2. Pour the balsamic vinegar and olive oil on top of the figs and sprinkle with pepper. Let it to cool. Cover up with plenty of parmesan shavings. Serve up.

Orange and Cointreau Pavlova
I not at all used to make meringues since they forever seemed so complicated. Then I saw somebody doing this recipe on TV in one of those Master Chef Type shows and it didn’t seem that difficult at all! You will require an electric whisk and some parchment paper.
Preparation Time: 25 minutes
Cooking Time: 1 hour
Makes: 8 to 10 servings
For the chocolate meringue base
6 egg whites
300gm castor sugar
3tbsp cocoa powder, sieved
1tbsp balsamic or red wine vinegar
50gm dark chocolate, finely chopped.
For the topping 500ml double cream or whipped cream
500gm fruit (berries were used in the original recipe but in india I use chopped fresh mangoes or sliced bananas)
2 to 3 tbsp coarsely grated dark chocolate
1. Preheat the oven to 180 degree C and line a sweltering tray with parchment.
2. Beat the egg whites awaiting satiny peaks form.
3. Beat in the sugar a spoonful at a time until the meringue is stiff and shiny, about 6 to 7 minutes.
4. Sprinkle over the cocoa and vinegar and the chopped chocolate and gently fold the whole thing awaiting the cocoa is thoroughly mixed in.
5. Heap on to a baking sheet in an overweight circle, just about 11-inch diameter, smoothing the sides and top.
6. Place in the oven, then instantly turn the high temperature down to 140 degree C and cook for about one hour until crisp around the edges, sides and top, but when you prod the centre it should feel slightly moist. Turn off the oven and open the door somewhat, and let the chocolate meringue cool entirely. When you are prepared to serve up, cautiously turn upside down the pavlova on to a big, flat bottomed plate.
7. Whisk the cream till thick but still soft and pile it on top of the meringue, then disperse over the fruit. Roughly grate the chocolate and shake over over the top of the pavlova. (While you may bake the pavlova earlier, decorate it just before serving).
Each serving: 420 calories, 4.6gm protein, 54.9gm carbohydrate, 21.5gm total fat (13gm saturated), 2.1gm fibre, 69mg cholesterol, 96mg sodium.
